Sorry its been a crazy week!

I am an aunt and she is the cutest baby EVER!!! Since I am stuck at home with the broken spine I cannot go see her (2 hours in the car would really be painful) , but she is TOO CUTE for words!! I am already crazy about her!!!

Emma was born last Wednesday and she is SO cute! (did I mention how cute she is???)

Deviled Eggs... the project for the day

As a person with new found time on my hands I am always looking for mini projects to occupy my day hours. So I was THRILLED when one of my very awesome friends asked me to do some research for her and find some delicious fun deviled egg recipes. So... I thought I would share.

This conversation also led to a new creative project for both of us... more to come soon on that!

I left out the "directions" part because it was all: boil eggs, cut in half, remove yolks, mix ingredients, put back in eggs. You get the idea.

So here are some yummy sounding ideas for Deviled Eggs: (keep in mind I NEVER follow directions... so I am sure I would alter each and every one in one way or another!)

Bacon and Deviled Eggs

Ingredients

3 tablespoons yellow mustard (eyeball it)

2 teaspoons (about a small palmful) smoked paprika, plus additional for garnish

6 pieces thick-cut bacon

12 eggs (save the carton they came in!)

2 tablespoons pickle relish (eyeball it)

3 tablespoons grated onion (about 1/2 small onion)

A few dashes hot sauce (add more if you like it spicy!)

2 tablespoons mayonnaise (eyeball it)

Salt and freshly ground black pepper

Wasabi Deviled Eggs

8 large eggs

1/3 cup mayonnaise

1 1/2 teaspoons wasabi paste

2 teaspoons unseasoned rice-wine vinegar

2 large scallions, minced (3 tablespoons)

Coarse salt

Pea shoots or sprouts, for garnish

Kimchi Bacon Deviled Eggs

2 eggs


1 tablespoon chopped napa cabbage kimchi

1 bacon rasher fried until crisp and chopped up


2 mint leaves, roughly chopped


1 tablespoon mayonnaise

Red Chili Deviled Eggs

8 large eggs

1/3 cup Hellmann's® or Best Foods® Real Mayonnaise

1 green onion, finely chopped

2 tablespoons finely chopped pickled jalapeno pepper OR dill pickle

2 tablespoons chopped fresh cilantro

2 teaspoons hot pepper sauce

1 1/2 teaspoons ancho chile powder

Spinach Deviled Eggs

12 hard-cooked eggs

1/4 cup mayonnaise

2 tablespoons vinegar

2 tablespoons butter or margarine, softened

1 tablespoon sugar

1/2 teaspoon pepper

1/4 teaspoon salt

1/2 cup frozen chopped spinach, thawed and squeezed dry

4 bacon strips, cooked and crumbled

Lemon Curry Deviled Eggs

Ingredients

16 hard-cooked eggs

1/3 cup sour cream

2 tablespoons lemon juice

1/2 teaspoon salt

1/2 teaspoon paprika

1/2 teaspoon ground mustard

1/2 teaspoon curry powder

1 dash Worcestershire sauce

Crabby Deviled Eggs

12 hard-cooked eggs

1 (6 ounce) can crabmeat - drained, flaked and cartilage removed

1/4 cup mayonnaise or salad dressing

2 tablespoons sweet pickle relish

1 tablespoon prepared mustard

2 teaspoons seafood seasoning

1/4 teaspoon pepper

Horseradish Deviled Eggs

6 hard-cooked eggs

1/4 cup mayonnaise

1 tablespoon prepared horseradish

1/2 teaspoon dill weed

1/4 teaspoon ground mustard

1/8 teaspoon salt

Dash pepper

1 dash paprika

Garlic Deviled Eggs

6 hard-cooked eggs

1/3 cup mayonnaise

1/2 teaspoon prepared mustard

2 green onions with tops, chopped

1 garlic clove, minced

1/8 teaspoon salt

Paprika

Herbed Deviled Eggs

6 hard-cooked eggs

2 tablespoons minced chives

2 tablespoons plain yogurt

2 tablespoons mayonnaise

1 tablespoon chopped fresh tarragon

1 tablespoon minced fresh parsley

2 1/2 teaspoons prepared mustard

1 teaspoon snipped fresh dill

salt and pepper to taste

Curried Deviled Eggs

24 eggs

1/2 cup mayonnaise

1/4 cup prepared yellow mustard

2 tablespoons horseradish sauce

2 teaspoons curry powder

1 teaspoon poppy seeds

1 teaspoon chicken bouillon granules

1/2 teaspoon ground coriander

1/2 teaspoon dried minced onion

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground turmeric

Cajun Deviled Eggs

6 eggs

2 tablespoons mayonnaise

1 teaspoon prepared Dijon-style mustard

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground cayenne pepper

Garlic, Basil, Bacon Deviled Eggs

12 eggs

5 slices bacon

2 large cloves garlic, pressed

1/2 cup finely chopped fresh basil

1/3 cup mayonnaise

1/4 teaspoon crushed red pepper flakes

salt and pepper to taste

1/4 teaspoon paprika for garnish

Bacon Balsamic Deviled Eggs

12 eggs

4 slices bacon

1/2 cup mayonnaise

1/4 cup minced red onion

2 teaspoons white sugar

1/2 teaspoon balsamic vinegar

1/4 teaspoon celery salt

1/4 teaspoon freshly ground black pepper

1/4 cup chopped fresh parsley

Mexican Style Deviled Eggs

6 eggs

1/4 cup mayonnaise

2 tablespoons canned chopped green chiles

1 tablespoon chopped pitted ripe olives

1/2 teaspoon chili powder

1/8 teaspoon ground cayenne pepper

Realistic Expectations

I am realizing that laying/sitting here is going to slowly drive my crazy. Three months is a LONG time to take it easy and not really do ANYTHING. I made a "to do" list of things I need to work on. These things are REALLY simple tasks, but I know its going to take me forever to do them. I am realizing that the hardest thing is accepting that I get tired SO easily.

I do not suggest ever breaking your back. Its not the best!

TV times...

For 3 weeks all I have done is watch TV… I had gotten out of the habit of watching television, but as you know, these days I have a lot of time and there’s a tv in my room. Here are some of my thoughts on shows I have recently come across in the land of television:

What Would Brian Boitano Make– REALLY … wow! Lets have a show name based on South Park Lyrics. Did I miss the part where he was a foodie? Today he seemed to be making food for roller derby girls. There was a lot of bacon involved. I only caught about 5 minutes of the show, but I am not sure I am going to watch it again . (who am I kidding, Food Network is my go to channel)

Jersey Shore - I finally caved, and watched it… and let me say, its almost like watching National Geographic. It is a glimpse into a culture that I am NOT a part of. Snookie is not at all like I thought she would be. She is quite likeable and actually there is something about her that reminds me of a VERY good friend of mine. I am a little concerned that “the Situation” is about 40 years old. The show won me over when Snookie and Vinnie dropped chicken in the floor and had NO idea what to do with it… when according to Mike “the Situation” what you should do is, “PICK THE SH*T UP, DAWG!!!”

Tosh.O – SHUT UP!!! My friend Lee finally explained what this show was all about and simply put… LOVE IT!

Angel- OH, MY NEW VAMPIRE BOYFRIEND… how I love you! Although as a vampire the Joss Whedon vamps are not attractive. David B. is a new celebrity crush. I love him on Bones… and now as Angel. I am revisiting Sunnydale and LA with a whole new perspective (AND Spike is there… gotta love a Billy Idol-esque vamp)

On the Road with Santino & Austin- This is my current favorite show. They have SUPER fun personalities AND they are going to crazy places and meeting fun people. The thing that I like most is these NY/LA guys are going to small town/middle of nowhere America and being SO nice. They don’t mock the people or the places. They do what the locals do and have a ball!

Dexter Season 4- SO good! Don’t want to spoil it for those who are a season behind—but so far… SO GOOD!

Bewitched- Tabitha started Nursery School on Friday… it was exciting times.

Veronica Mars- LOVE IT! COULD WATCH IT OVER AND OVER AND OVER AND OVER! Kristin Bell is a bad ass!

The Great Food Truck Race- I really like this show! I wish Teresa was on this show! She would KICK ASS!!! The people on the food trucks are very interesting; they all have VERY different concepts. I cannot believe that people who ONLY served banana pudding and wings were surprised that they lost… ALSO… who doesn’t check their propane tank… WTF! YES, you are going to lose because you didn’t plan!

Baggage- One of the most random “game shows” I have ever seen. Yet, I get sucked into it… in some ways it reminds me of that 1992 dating show hit called “Studs”

Castle- GREAT show! Thank you for my new TV boyfriend, Nathan Fillion.

Firefly- Nathan! There you are again!!! Who would EVER think I would like space cowboys… I really wish at least one character was named Maurice
